We trekked off to Bingen, home of Hildegard, the 12th century saint and composer of the first opera, to see what was there. We found interesting graffiti everywhere. Lots of Mother & Child paths. A beautiful garden of pear, apple and plum trees, as well as grapes and blackberries. The convent of Hildegard makes Sekt, Germany’s version of champagne. They also make these dinkel cakes, which were a lot like rice cakes but a bit tastier, especially as they are covered in chocolate.
